Cooleeney is a soft mould ripened cheese, with a beautiful creamy texture and a distinctive aftertaste.
Cooleeney is produced on the Maher farm in the heart of Tipperary where the pastures are rich and are surrounded by damp boggy land an environment which allows the Mahers to produce Cooleeney which, when mature are creamy and oozing with the flavour of one of the finest cheeses.

All milk used for cheese making is supplied from our own herd and is of highest quality.

Dunbarra is a soft mould ripened cheese, firmer than a Brie yet has a distinctively creamy texture. Dunbarra is produced on the Cooleeney farm where all milk used for cheese making is supplied from our own herd and is of highest quality. Dunbarra is available in three varieties plain, garlic and peppered. The different flavours widen its versatility in the culinary field.

Ingredients: Pasteurised cows milk, cultures, vegetarian rennet, garlic/pepper & salt. Each case contains US repack labels featuring all relevant information such as ingredients and nutritional declarations. All cheese made in Cooleeney is free from artificial flavourings and ingredients.

Gortnamona is a soft mould ripened Irish goats cheese. The cheese has a fresh clean flavour with a creamy texture when mature. The unique flavours of Gortnamona are attributed to the clean environment in which the milk is produced. All the milk used in the production is produced locally in Ireland. Gortnamona is produced to the highest standards by Cooleeney, which have being producing soft artisan cheese since 1986. As goats products are classified as non dairy, Gortnamona is an ideal substitute to cow cheese. It is medium fat and is recommended as part of a low cholesterol diet.

Darú is a beautifully balanced handcrafted farmstead cheese with a natural rind and long finish. It is a semi hard cheese made with pasteurised cow’s milk from the herd of the Maher family in the heart of Tipperary where the pastures are fresh and green. Vegetarian rennet is used in the production of this cheese and therefore it is suitable for vegetarians as well as coeliacs and diabetics.

Allergen Information: Free from all allergens except milk. It is also free from GM material.

Availability: It is available in 7lb/3.5kg (approx) wheels.
Each cheese is individually wrapped and a case holds 1 cheese only.

Maighean Cheese
A true artisan cheese made from raw milk. Its unique creamy interior is attributed to the quality of the milk used in its production. All cheeses are made from the milk of our own Friesian herd, which graze on green grass in a clean environment at the edge of the Golden Vale. To enjoy Maighean in prime condition choose a cheese of approx 10 weeks old and allow to reach room temperature. This is truly a cheese to be eaten alone or with a biscuit or bread, to enjoy its rich flavour.
Ingredients: Raw cows milk, cultures, vegetarian rennet, Salt.

All cheese made in Cooleeney is free from artificial flavourings and ingredients.

Chulchoill

Chulchoill; a soft goat log, handmade from top quality Irish goats milk. The flavour is almondy and aromatic. This cheese is made with pasteurised goats milk and vegetarian rennet. Chulchoill has a creamy texture with a white moulded exterior and may develop a brownish tinge as the cheese matures.
